Dense Rhubarb & Golden Berry Fruit Bread

Basically you just mix everything together really well and throw it in the oven-- don't over think this one! Have fun-- you can add or subtract as many of the extra nuts/seeds/fruit etc as you like to make it from the ingredients you have! I used rhubarb as my dad had sooooo much of it growing in his garden and so I thought I'd play with using it in bread! Though can switch for apple / sweet potato / berries / pear / zucchini?! Anything really! 

Makes 2 loafs -- so half ingredients for 1! 

INGREDIENTS

  • 2.5 cups stewed rhubarb (for two loaves-- half for 1!) -- boil chopped rhubarb in a little water for around 60 minutes. Strain water. Allow to cool down before using.
  • 2.5 cups almond meal 
  • 1 cup arrowroot 
  • 1 cup coconut flour
  • 1 cup buckwheat oats (sub buckwheat flour or teff even!)
  • 1 coconut flakes
  • 1 tsp aluminium-free baking powder
  • 1/2 cup psyllium husks 
  • 1 tbsp ACV
  • 1/3 cup chia seeds
  • 1/3 cup goji berries
  • 1/2 cup golden berries
  • 1 cup organic currants
  • 1/3 cup coconut oil
  • 1/2 cup walnuts (or any nuts/seeds etc of choice)
  • 1/2 cup chopped dates
  • 1-2 tbsp caraway seeds
  • 1/3 cup rice malt (or honey or maple-- or none! This is optional obvs!)
  • 1/2 tsp Himalayan salt
  • 1/3 cup almond flakes (all of these extra things are optional yum BTW !)
  • 2 eggs (optional -- as there's chia seeds -- can skip if prefer!)

INSTRUCTIONS

  1. Mix all wet ingredients together (melt the coconut oil first)
  2. Mix all dry ingredients 
  3. Combine wet & dry (I used my hands for this and just got in it-- it needed a lot of kneading and good arm work basically to combine properly! BUT obviously use a wooden spoon if that's your thing!)
  4. Split the mix into two greased (I used some coconut oil) hightop loaf pans, and press down to mould around the pan. Using a pastry brush lightly coat with coconut oil (or olive oil). Sprinkle with something yummy (I used some more almond flakes-- but hemp seeds or sesame seeds would be yum!).
  5. Bake for 40-45 minutes (until the knife or tooth pick comes out clean).
  6. Allow to cool down before removing from baking tins -- and finally-- once cool, remove and let the loafs chill a bit longer on a wire rack! (I of course couldn't wait... )
  7. Slather on some ghee and pour that cuppa xo
